Turkish Salad with a Twist

This Turkish salad takes on a new flavor profile by adding celery to the recipe which makes this already crunchy dip even more irresistible.
Ingredients:
2 teaspoons oil
1 large onion, diced and divided in half
1 large red pepper, diced and divided in half
3 stalks celery, diced and divided in half
2 cloves garlic
2 medium tomatoes
1 cup tomato sauce
1/2 cup tomato paste
2 teaspoons salt
1 teaspoon cumin
1/3 cup fresh parsley
1/2 teaspoon pepper
2 teaspoon sugar
1/2 cup water
Directions:
1. Sauté half of the diced onion, half of the diced red pepper, and half of the diced celery in oil for 3 minutes.
2. Add the rest of the ingredients (except the reserved halves of onion, red pepper and celery).
3. Keep on low flame for another 5 minutes.
4. Add remaining vegetables.
5. Using an immersion blender, blend ingredients. You will have a more chunky texture as some of the vegetables aren’t fully cooked giving you a crunchy bite – creating a salad with taste and texture.
Parve. Yields 6 cups.
