As a foodie, I confess, I’m easily excited by the release of a new kosher cookbook!
It’s hard to predict at the time of an initial review which cookbook will become my loyal kitchen sidekick. Yet Leah Schapira’s soon to be released (November 16, 2011) cookbook, Fresh & Easy Kosher Cooking, seems to be the exception to the rule.
I was pleasantly surprised at my first perusal through this 336-page hardcover cookbook to discover that many of the recipes are in fact already my tried and true recipes.
Let me explain. As a recipe junkie, I clip recipes from all over. The pile grows and is extremely disorganized. Only the recipes which I’ve actually tried and enjoyed are included in my personal recipe binder. If a recipe fails or simply produces mediocre results I toss it.
Many of the recipes featured in Fresh & Easy Kosher Cooking are these same oldies but goodies, which I’ve saved from Leah’s features in Mishpacha and Ami magazines, and which I’ve come to depend on over the last few years. And there are many new recipes I’m eager to try.
In essence Leah Schapira’s Fresh & Easy is MY cookbook. What better endorsement can I give?
The cover, graphics, and vivid color photography throughout are what we have come to expect from Artscroll.
The recipes are organized into the standard categories: Soups, Salads, Side Dishes etc. with the added bonus of at-a-glance menus. These menus pull recipes from all categories and regroup them into handy menus for Pesach, Make-in Takeout, and Freezes Well, to name a few.
Not sure what side dish works well with a particular main? The sidebar features pairing suggestions for most main dishes.
Here are some of my family’s favorite recipes from Fresh & Easy:
- Pizza Dipping Sauce- say goodbye to leftover dry pizza crust.
- Orange Glazed Flanken –this quickly became a Pesach tradition in my home.
- Overnight Potato Kugel – I have a second copy of this recipe tucked away for Pesach.
- Deep-Dish Chocolate Chip Pies – my go-to dessert this past Sukkos.
And some new recipes I can’t wait to try:

I really like the recipe for the guacamole with crispy tortilla chips. it is comprised of basic pantry ingredients that you can pull together in a few seconds, and the recipe itself is something that we have all made at one time or another, but presented beautifully that would create an elegant, impressive table!
my kids love lemon garlic chicken. marinate the chicken in lemon juice (fresh, of course) tons of sliced garlic cloves, olive oil and black pepper for a few hours then grill till done. It’s easy and really delicious!!
My go-to healthy dinner recipe is ripped from mishpacha
Its tilapia covered with lowfat mayo, tomato paste, brown sugar, and onion soup mix baked at 350. Simple, healthy, and delicious!
My healthy easy recipe is stir fried chicken sautee vegetables with some oil, soy sauce, garlic powder and add dark chicken cutlets sliced for the last 15 minutes. Easy and delicious.
One of my absolute favorite “tried and true” recipes is Chicken Marbella. It’s super easy to prepare, easy to double, consistently tasty, and works great for everything from Rosh Hashanah to Shabbat to Pesach!
for a refreshing taste of egg salad, try this: saute a chopped onion and a can of sliced mushrooms. when that is cool, mix in hard-boiled eggs, mayo, paprika, salt, and pepper. also, you can try an avocado egg salad, where you mix together hard-boiled eggs, avocados, a little bit of olive oil, and salt and pepper. a new taste to an old salad!
My never-fail recipe is fettucini alfredo from Susie Fishbein’s book. It’s fast and always crowd pleasing!

There are so many great recipes to make, I would love to be able to look at the recipes in a book format
I’ve never used any of her recipes. I would love to try some that are simple and easy. One of my favorite recipes is the simple cheesecake recipe I have. It is so simple and easy. My family loves it.
My fast and easy supper is chicken cutlets coated in dijonaise and topped with french fried onions. It’s no fail and delish!
my kids love the hearts of palm salad i make for shabbot
its a can of hearts of palm with diced tomatoes and a can of corn add mayo and a little vinegar and its done its so easy and simple plus yummy
my go to dinner is salmon broiled with lemon juice, fresh thyme, salt and pepper. Takes less than 10 minutes, my kids eat it (well, most of them) and it is healthy!
My favorite recipe is a soy sauce chicken recipe! Im a really picky eater but this recipe is delicious and so easy and quick to make!
My go to dish when i am i need to put dinner but not to much thought is home made veggie pizza. My gang loves it and am guaranteed no left overs.

The only reason that I buy the Ami magazine (and used to buy the Mishpacha) is to see the recipes of Leah Schapira she is my favorite, she is really amazing, My favorite recipe of her is the pizza recipe, its simple and easy, my kids loves it, I hope to win the cookbook, if not I will need to buy it
Delicious Sweet Roast
One of my yummy recipes is Sweet Roast!!
I take a roast ,put( I think 16 ounce jar maybe 32) sourkraut on top.
Then I put ( a can)crushed tomatoes with their sauce on top of that.
Next ,I put on (a box) brown suger.
Then plop it in the oven!

Your review could have been mine! I have so many of Leah’s recipes already clipped and dirty from constant use – especially her Pesach recipes. How exciting to be able to have them in one book! Her pesach duck sauce is one we all love!
My go to recipe is macaroni and cheese! Can’t get easier than that!
My easiest dessert is the warm apple betty from the spice and spirit cookbook. You can subsitute any fruit for the apples – always a winner especially with some ice cream or whipped cream on the side.
My go-to dessert recipe is the chocolate cake from Quick & Kosher. It has mayo, chocolate pudding mix and non-dairy creamer in it. It’s obviously always a winner!
My go to supper is tacos or sweet and sour meatballs, both easy and yummy!

I make honey dijon chicken with dipping sauce once a week. Even my picky eaters enjoy it.
Our tried and true dinner recipe stir fry chicken with veggies from Quick and Kosher with fried rice from the spice and spirit. My husbands Favorite!!!!
Garlic Chicken! I think it is a Susie Fishbein recipe, but ive made it even easier and it is my most requested dish. My husband even told me the other day that he would be happy eating it EVERY NIGHT! lol
My go to side dish lately has been sliced pears and sweet potatoes (both cut into wedges) sprinkled with salt and pepper and glazed with melted margarine and maple syrup. A great fall treat that looks, tastes and smells delicious!
I love making suppers that are very easy but seem like I worked hard to make them! I make shwarma chicken for supper often and everyone loves it!
Coca Cola Chicken is always a winner!
One of my tried-and-true recipes is for cabbage soup – it’s chock full of delicious veggies and spices and is practically a meal on its own!
Great no fat chicken cutlets:
4 – 5 boneless chicken cutlets
1 can diet coke
1 c ketsup
Combine liquids in sautee pan and then add cutlets.
Cook on medium for about 12 – 15 minutes, until cutlests are cooked to your taste.
Remove cutlests. Increase heat to high and let mixute cook out, til it produces a BBQ sauce like substance. Dollop over cutlets and serve.
Optional: cook together with your chioce of musrooms, cut up celery, peppers etc.
Onion chicken from the Mishpacha magazine like 2 years ago! This chicken is to die for! the chicken gets broiled first and onion get sauteed and the get a yummy sauce treatment. After they’re ready, chicken gets covered in the yummy goodness, covered and backed for 2 hours! YUM!
My go-to recipe is Chicken Fajitas from Short on Time! Would love to try some of Leahs recipes!
My best tried & true recipe is my dark red compote: i bring 1 28 oz can sliced peaches, 1 15 oz can sour cherries & 1/2 c sugar to a boil. Leave to boil for 10 minutes then mix in 1 bag frozn strawberries blended & 1 container strawberries w/ sugar.
Its quick & delicious! My whole family loves it!!!!

My tried and true recipe is for sweet potato pie. My friend gave it to me, and I make it about once a week. My (picky) kids love it!

My favorite easy recipe is teriyaki salmon:
salmon, sliced scallions, sesame seeds
pour over soy sauce, rice vinegar, drop of toasted sesame oil,
cooking wine, honey and that’s all! it’s yum!
bake for about 20 min and then broil for 2 minutes
We love the meat lasagna recipe we found in mishapacha magazine last year. Its super easy and DELICIOUS!

Healthy Shepherds Pie
Sautee Onion/Green/Red Pepper, Tomatoes, Garlic, with Ex Lean Ground Beef
or Vegetarian Meat.
2nd layer Cover with Mashed Cauliflower, and season according to your taste. Onion Soup, lil creamer, or if parve Parmesan cheese..
My family licks this clean & dont even realize that its healthy for them!
I love to make tilapia in a balsamic butter reduction sauce. Sounds complicated, but it’s so easy and delish! Just heat minced garlic and 1/4 cup balsamic vinegar over medium heat until it’s reduced to a syrup, then add butter and melt it. Pour the sauce over seasoned (with salt and pepper) tilapia fillets and bake for about 20 minutes. Sooo good!
sautee 2 onions
add
1 cup brown sugar
1 tbsp soy sauce
mix till dissolved
put chicken bottoms in pan – sprinkle garlic powder and paprika. pour sauce over chicken. cover and bake 350 for 1 and half hrs.
ENJOY!!!!
One of my tried and true recipes is my simple chicken sprinkled with spices and drizzled with olive oil. Its healthy, always comes out perfect and moist and my family loves it.
I would love love love to win this cookbook!!! Our tried and true fast supper is sweet and sour meatballa, easy, delicious.. One can tomato sauce and one can cranberry sauce!!

My go to recipe is called pizza chicken. Its basically just chicken with tomato paste spread across the tops, sprinkled with oregano and baked! U get the flavor of pizza withiut the carbs!
Coat chicken bottoms with mayo and ketchup mixture and then coat witrh cornflake crumbs. Bake on 350 uncovered for around an hour and a half. Simple and delicious!!!
Rosemary London Broil:
1/2 C Olive Oil
1/4 C Honey
1/4 C Soy sauce
6 cloves garlic, crushed
6 T. rosemary, chopped
3 t Black Pepper
Mix Marinade, let London Broil rest in it for at least a half hour, then broil/grill it to your preference.
This works every time and tastes absolutely delicious!

My kids love the terra chip chicken recipe from the Toronto Gathering cookbook. The chicken is coated in flour, lots of garlic powder, salt and pepper than dipped in a mixture of egg, lemon juice and Dijon mustard and then dipped in crushed terra chips. I have to make it every Shabbos and would love a new cookbook to try out new recipes.
My go to recipe is salmon Dijon with honey mustard and and dehydrated mashed potatoes for coating.
its my first time hearing of her I want to get it but scared husband will make a noise of it as i have too many cookbook my best recipe is a smoothie in the moning with fruit I made this morning peach pineapple strawberry and banana.I had a stroke on my left side so its difuclt to cook but I like to I cook only when someone else is in the house.
