Mango Pesto Sandwich

This sandwich is inspired from Moos Café in Johannesburg, South Africa. The unconventional list of ingredients works together extremely well to create a great tasting sandwich. Using tofu instead of haloumi cheese is a great way to increase the health benefits of this sandwich and make it a first-rate vegetarian sandwich.
4 Whole grain rolls
1/2 cup of Pesto (see below)
1 cup baby arugula
1/2 cup caramelized onions (see below)
2 sliced mangos
4 slices of pan seared haloumi cheese or pan seared firm tofu
Directions:
1. Smear pesto on one side of bread.
2. Top with arugula.
3. Top with haloumi cheese or tofu.
4. Top with mango slices and caramelized onions.
Pesto (serves 12)
Ingredients:
2 cups fresh basil
1/2 cup pine nuts
3 cloves garlic
1/2 cup parmesan cheese (optional)
1/2 cup oil
Salt and pepper to taste
Directions:
1. Process basil, pine nuts and garlic.
2. Add parmesan cheese (optional).
3. Slowly pour in oil and blend until smooth. To retain color drizzle the pesto with a bit of oil. 4. Refrigerate until ready to use.
You can also freeze the pesto in ice cube trays; cover with plastic wrap and pop a cube or two out when necessary
Caramelized onions (yields 1 cup)
Caramelized onions are so simple to make and showcase how one ingredient can shine.
Ingredients:
2 large Spanish onions, sliced very thinly
4 tablespoons oil
1 tablespoon salt
Directions:
1. On very low heat, heat oil until hot and add onions and cook for about thirty minutes until onions are caramelized.
2. Check on onions every ten minutes or so to make sure they are not frying and move them around if necessary.
3. Store caramelized onions in a covered container until ready to serve.
Servings: 4-6.

I am so thrilled you like my Pasture Perfect sandwich, that’s what it’s called at Mooz Brothers. I was the original menu designer at Mooz and actually opened the restaurant for the owners who own the dairy that supplies it. The divine bovine is the most unusual but very popular sandwiches, it was originally made with grilled mango but we found it too time consuming and diffucult to get it the correct texture without it becoming mushy. Come to Jo’burg and try some more, I recomend the udderly delicious and the mood food, two of my favorites
