Green Beans with Honey Mustard Basil Dressing

Another recipe from Bitayavon Magazine.

This appealing salad utilizes green beans, mango, basil, and cucumber (all summer produce) in a creative way that will wow your palate. The dressing is great as a marinade for fish and chicken and as a dipping sauce.

 

Ingredients:

1 pound green beans
2 mangoes, cubed or 3 peaches, cubed
1/2 cup pine nuts
3/4 cup fresh basil leaves
1/4 cup mustard
1/4 cup honey
1/4 cup lemon juice
2 garlic cloves
1/3 cup oil

Directions:

1. Place green beans in a pot of boiling water for about a minute and quickly drain and then let cool.

2. Blend basil, mustard, honey, lemon juice, garlic cloves and oil.Alternatively, finely chop basil and garlic and place in container, then add mustard, honey, lemon juice and oil and shake vigorously.Dressing can be refrigerated until ready to use.

3. Place cooled green beans and mangoes/peaches in a salad bowl.Pour dressing over salad ingredients. Sprinkle with pine nuts.

Serves: 6.

    What type of mustard goes best in this recipe? I have yellow, spicy brown, grainy dijon, etc.
