Yummy Lemon & Garlic Chicken

Try this chicken over mashed potatoes.
Ingredients:
3 cut up chickens
6 tablespoons olive oil
4 frozen cubes of garlic
pepper to taste
2 tablespoons each of rosemary and garlic
1 whole head of garlic
1 lemon, thinly sliced
1/2 cup red wine
Directions:
1. Preheat oven to 425.
2. Place the chicken in a large roasting pan.
3. Mix the olive oil with the frozen garlic till smooth.
4. Sprinkle the spices, then pour the olive oil over the chicken.
5. Place the lemon and garlic between the chicken.
6. Pour the wine over the chicken.
7. Bake at 425 for 10 minutes then lower to 400 for 1/2 hour , uncovered.
8. Then lower to 375 till nice and brown for about another 1/2 hour.

is this chicken bottoms or chicken cutlets?
i use a whole cut up chicken, you can use bottoms with the skin on
