Chicken & Sausage One-Pot

This one-pot meal pleases everyone. Although the sausage is spicy, the tender chicken remains mild enough for the young kids to enjoy.

Jack’s Gourmet is a new line of authentic hand crafted sausages. They are produced using quality meats and spices, contain no artificial ingredients, and are available in kosher supermarkets in the refrigerator case.

Ingredients:

10 chicken drumsticks
1 tablespoon olive oil
Salt
Pepper
Paprika
1 (12-ounce) package Jack’s Gourmet Spicy Mexican Style Chorizo Sausage
3 medium russet potatoes, cut into chunks
1 diced red pepper, diced
1 medium onion, diced
1 bay leaf
4 cloves garlic, minced
1/2 cup dry red wine
1 (15-ounce) can fire-roasted tomatoes
1 cup water
Chopped parsley
Crusty bread

Directions:

  1. Season the chicken with salt and pepper. Heat the oil in a dutch oven or large skillet. Add the chicken and brown for a few minutes. Turn the chicken, season with paprika, and brown for another few minutes. Then transfer the chicken to a plate.
  2. Add the chorizo to the skillet and sautee for a few minutes. Then add the potatoes, peppers, onion, bay leaf, and garlic, sauteeing for another minute. Add the wine, stirring to deglaze the pan. Add the tomatoes and water. Return the chicken to the pot, lower the heat, cover and cook the chicken through, about 25 minutes.
  3. Remove the lid and  cook for an additional 10 minutes to thicken the sauce. Garnish with parsley and serve with bread.

Meat. Serves 6.

    Ohmygosh. I was so happy to see this recipe! I <3 Jack's Gourmet … their scents filled Kosher Fest this year, and I've been a fan ever since.

    I'll have to try this out on my husband, who swears he hates sausage.

    If you make this and plan on reheating it for Shabbos, make sure to add more liquid! Mine was *so so so* dry with only 1 cup water :(

    … and by that I mean … if you plan on making and heating it up for Friday night (which is what I did). I put it in a preheated, off oven and it dried out completely.
