Snowball Cookies

Baking a batch of these melt in your mouth cookies is a fun activity for a snow day!

Ingredients:

1 cup shortening (try Earth Balance)
3 tablespoons plus 1 cup confectioner’s sugar
1 teaspoon vanilla extract
2 cups flour
1 cup ground almonds

Directions:

  1. Preheat oven to 350 degrees. Mix the shortening with 3 tablespoons sugar and vanilla. Gradually add flour and nuts.
  2. Form into 1-inch balls and place on parchment lined cookie sheets. Bake for 25 minutes. When cookies are still warm roll them in 1 cup confectioners sugar. You may need to dust with additional sugar right before serving.
