Cardamom Challah

We tinkered with our favorite challah dough recipe and came up with a fragrant alternative! Cardamom is an aromatic spice. A member of the ginger family, its the key ingredient in Turkish coffee. Cardamom is the second most expensive spice (the ground version is more reasonable) but a little imparts a lot of flavor.

You can pick up the raw sugar at your local cafe ;) . It gives the crust texture and an extra hint of sweetness.

Ingredients:

5-pound challah dough recipe

1 tablespoon ground cardamom

2 teaspoons vanilla extract, plus an extra dash

1-2 packets Demerara raw sugar

Directions:

  1. When preparing the challah dough, add the cardamom with the dry ingredients and 2 teaspoons vanilla to the wet ingredients.
  2. proceed to mix the dough following the challah dough recipe. After the shaped challahs have risen, add a dash of  vanilla extract to the egg wash. Brush the shaped challahs with the egg wash and lightly sprinkle with the raw sugar.
