Chocolate Mousse Pie

Ingredients:

1 1/2 packages graham crackers, crushed
1 1/2 sticks margarine, melted
12 oz. chocolate chips
1 tablespoon red wine
5 tablespoons water
6 eggs, separated
2 tablespoons sugar
1 (16 oz.) dessert topping

Directions:

  1. For the crust- Mix together cracker crumbs and margarine. Spread into the bottom of a 9×13 baking pan or 2 round pans and freeze.
  2. For the Mousse layer- Combine chocolate, wine, and water in the top of a double boiler. Stir until completely melted. Let cool.
  3. Beat egg yolks with sugar. Fold into chocolate.
  4. Beat egg whites into a snow. Fold into the chocolate and yolk mixture. Pour over crust.
  5. Whipped Cream Layer- Whip the dessert topping until stiff. Spread over mousse layer. Top with chocolate shavings, chopped nuts, or sprinkles.
  6. Freeze pie until a few minutes before serving.

    Jello pudding mix is o-k pareve, you can mix that with coconut milk and it sets very well for a really fast mousse pie (or can use pareve creamer). I like the double chocolate fudge mix with Rollands brand coconut milk
