Red Pepper Soup

Low in calories, high in flavor… You’ll love this soup!

Ingredients:

2 tablespoons olive oil
4 large onions, sliced
6 red bell peppers, chopped
3 cloves garlic, minced
6 cups water
1 tablespoon onion soup mix
salt & pepper, to taste

Directions:

Heat oil in a stock pot. Sautee the onions, peppers, and garlic until soft. Add water and seasonings. Bring to a boil, then lower to a simmer for 25 minutes. Puree with an immersion blender. Adjust seasoning before serving.

    Naomi… Sounds so yum.. Thx for posting.. I hope you don’t mind if I add that since I don’t like to use onion mix, I’ll be adding sautéed onions to it… Sounds delish Thank you :)

    Onion soup mix is always optional, just add more seasoning.
