Pumpkin Oatmeal Cookies
October 11th, 2010 PrintDon’t be tempted to substitute craisins for the dried cherries in these cake-like cookies, they taste like mini bits of fruit leather and are definitely worth it!
Ingredients:
1 cup margarine
1 cup brown sugar
1 cup sugar
1 cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
2 cups flour
1 1/2 cups rolled oats
1 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt
1/2 cup chocolate chips
1/2 cup dried cherries, roughly chopped
Directions:
- Preheat the oven to 350 degrees. Line 2 cookie sheets with parchment paper.
- In a mixer, beat the margarine and sugars until fluffy. Add pumpkin, egg, and vanilla. Mix well.
- With the mixer running, add flour, oats, baking soda, cinnamon, pumpkin pie spice, and salt. Mix until combined. Fold in the chips and cherries.
- Drop by teaspoonfuls onto lined cookie sheets. The cookies will spread while baking so don’t crowd the pans. Bake for 12-14 minutes. Cool on the trays before removing them.
Parve. Yield 2 dozen.
