Zucchini Pizza

Zucchini is in abundance now and we found a great way to add it to a family favorite… pizza. You can use store bought pizza dough such as Trader Joe’s or make the pizza dough from scratch. While this recipe does not call for tomato sauce, we prepared a variation using whole wheat pitas, sliced in half, spread with a tablespoon of prepared pizza sauce, and topped with zucchini and cheese – the results were quick and equally tasty!


Ingredients:

1 store bought whole wheat pizza dough
2 large zucchinis
2 cups mozzarella cheese, shredded
1 teaspoon salt
1/2 cup panko crumbs
Parmesan cheese

Directions:

  1. Preheat the oven to 450 degrees. Peel and grate 2 large zucchinis. Sprinkle with 1 teaspoon of salt and let rest for about 30 minutes. Squeeze the zucchini and pour off any liquid. Combine the shredded zucchini and cheese.
  2. Line a cookie sheet with parchment paper. Roll out the dough to fit the entire pan. Add the zucchini and cheese mixture and spread over the dough. Leave less zucchini in the center and more towards the perimeter since the edges cook faster. Sprinkle with panko crumbs.
  3. Bake for about 20 minutes. Cut into squares and sprinkle with parmesan cheese before serving.
