Grilled Pitas
June 16th, 2010 PrintHot dogs and burgers aren’t the only foods worth grilling. Try some classic Israeli dishes like Schwarma-spiced chicken breasts, or beef kabobs. Serve with Israeli salad, chummus, and tehina. And of course you’ll need pitas to complement the meal.
If you’re familiar with baking challah this recipe will be a breeze.
Of course these taste amazing straight off the grill, or bake them earlier and reheat in the oven for a few minutes.
Ingredients:
1/2 cup lukewarm water
1 tablespoon honey
2 ¼ teaspoons active dry yeast (or 1 packet)
2 cups whole wheat flour
2 cups white flour
1 ½ teaspoons kosher salt
2 tablespoons olive oil
1 ¼ cup lukewarm water
Directions:
- In a small bowl mix the 1/2 cup water with the honey and yeast. Let sit until the yeast begins to foam.
- Put the flour and salt in the bowl of a mixer fitted with a dough hook. Start the mixer and add in the olive oil. Mix well. Then pour in the yeast mixture and 1 ¼ cups water. Increase the speed to medium and mix until the dough pulls away from the sides of the bowl and forms a smooth ball. Transfer the dough to a greased bowl. Cover and let rise for one hour until doubled in bulk.
- Turn the dough onto a floured surface. Knead for a minute or so then form the dough into a log and cut into 10 pieces. Roll each piece of dough into a disc 6” in diameter and about ¼” thick. Place on a greased baking sheet and cover with saran wrap. Let rise for another 30 minutes.
- Oil the grates of a grill and preheat. Brush the pitas with olive oil and place greased side down on the hot grill for approximately 2-3 minutes. Once they start to brown use a spatula to flip them over and continue to grill for another 2-3 minutes. Watch them carefully because they bake really quickly and cooking time will vary depending on the heat of your grill.
