Squash Muffins

Ingredients:

1 large zucchini
3 eggs
1 1/2 cups sugar
3/4 teaspoon vanilla sugar
1 teaspoon  cinnamon
1 cup oil
3 cups flour
1 teaspoon baking powder
1 1/2 cups walnuts, optional
1 cup raisins, optional

Directions:

  1. Preheat the oven to 350 degrees.
  2. Grate the zucchini. Mix with eggs, sugar, vanilla, cinnamon, and oil. Add the flour and other dry ingredients.
  3. Spoon into muffin liners.
  4. Bake at 350 for 25-30 minutes.
