Cherry Cheese Roll

Ingredients:

1 package flaky dough (pre-rolled sheets)
1/2 lb.  farmer cheese
1/2 cup sugar
1 Tablespoon vanilla sugar
1 egg yolk
1/2 can cherry pie filling
Melted butter
Confectioners’ sugar

Directions:

  1. Preheat the oven to 350.  In a mixing bowl, mix cheese, sugar, vanilla and egg with fork.  Set aside.
  2. Roll out dough on a greased piece of parchment paper.  Spread cherry pie filling down center of dough (lengthwise).  Spoon the cheese mixture on top of the pie filling.  Fold the two sides over filling.  Roll over and place seam side down onto greased cookie sheet.  (I keep it on the greased parchment paper.)
  3. Brush top of dough with melted butter.  Bake until dough is golden brown about 45 minutes.  Slice when cold, sprinkle with confectioners’ sugar and serve room temperature.
