Pan Browned Tilapia

4 fillets Tilapia
salt & pepper
1/4 cup flour (or chick pea flour)
5 tablespoons oil (separated 3 & 2)
1/4 cup lemon juice
3 tablespoons parsley
Directions:
- Pat fish dry and season with salt and pepper. Dredge in flour.
- Heat 3 T. oil in a pan and brown fish 2-3 minutes on each side. Set aside on a platter.
- Add 2 T. oil and 1/4 cup lemon juice to the pan and bring to a boil. Lower heat, add parsley and simmer 30 seconds deglazing the pan.
- Pour the sauce over the fish & serve.
