Zuchini Quichelettes

These parve mini quiches look beautiful as a Yom Tov side dish.


Ingredients:

2 zucchini
1 onion
1 carrot
4 eggs
1 cup flour
1/2 teaspoon baking powder
1 tablespoon sugar
1/2 cup oil
salt and pepper to taste
24 (3″) mini pie crustsor a 9″ pie shell

Directions:

  1. Preheat oven to 350.
  2. Peel stripes on the zucchini. Then grate the zucchini, onion, and carrot.
  3. Mix other ingredients to form a batter. Fold in the vegetables.
  4. Pour mixture into a 9″ round pan or 24 mini pie shells.
  5. Bake for 1 hour.
