BBQ Beef Sandwiches with Coleslaw

Assemble the ingredients in your crock pot after breakfast for a great hardy dinner that cooks itself.
Adapted from recipes found on mybakingaddiction and Mishpacha Family First Magazine Issue 172 12/30/09.

Shredded Beef:

Ingredients:
2 pounds chuck meat
¼ cup brown sugar
1 onion, sliced
2 teaspoons crushed garlic (or 4 whole cloves)
¾ cup ketchup
½ cup light beer

Directions:
Place ingredients in a crock pot in the order listed above. Cover and cook on low for 8-10 hours or on high for 5 hours. Remove the meat and juices from the pot. Shred meat using 2 forks. Return meat to pot.  Pour over half the juices discarding the onions. Cook on high for an additional 20-30 minutes.

Sweet Coleslaw:

Ingredients:
1 (16 ounce) bag coleslaw mix
2 tablespoons diced onion
2/3 cup mayonnaise
1/3 cup white sugar
1 tablespoon white vinegar
1/4 teaspoon salt

Directions:
1. Combine the coleslaw mix and onion in a large bowl.
2. Whisk together the mayonnaise, sugar, vinegar, and salt. Pour dressing over coleslaw mix and toss to coat.

Assemble beef and coleslaw sandwiches using Kaiser rolls.
