Baked Egg Rolls
February 2nd, 2010 PrintEgg rolls are a tasty appetizer or side dish and are simple to prepare. There’s no need for frying.
Ingredients:
1 package Nasoya Egg roll wraps (about 20)
2 tablespoons canola oil
3 sliced scallions
2 bags dole coleslaw mix
1/8 teaspoon cumin
1/4 teaspoon coriander
1/4 teaspoon ground ginger
1/2 teaspoon garlic
1/8 cup soy sauce
1 teaspoon toasted sesame oil
Duck sauce
Directions:
Heat oil in a large skillet.
Saute scallions and cabbage and spices until slightly wilted, about 4 minutes.
Remove from flame and add soy sauce and sesame oil.
Preheat your oven to 400 degrees.
Prepare a cookie sheet lined with parchment paper.
Place one egg roll wrap in front of you with a point facing down (diagonal).
Put a mound of the prepared cabbage in the center.
Fold the bottom corner up and over the filling, then fold in the 2 sides.
Last, fold down the top corner and place the egg roll seam side down on a baking sheet.
Spray the prepared egg rolls with cooking spray and bake in the oven for 20 minutes, turning them over halfway through the cooking time.
Serve with duck sauce.
