{Tu B’Shvat} Fruit Leather Rolls

Recipe:

2 cups dried apricots
3 cups boiling water
2 tablespoons honey
1/2 cup sugar

Directions:

  1. Place apricots in a bowl and cover with boiling water. Let sit for 30-45 minutes.
  2. Transfer apricots (reserve the liquid) to the bowl of a food processor fitted with a blade attachment.
  3. Add honey and sugar and process until completely blended and smooth. Add a small amount (1 tablespoon at a time) of the reserved liquid to obtain a spreadable consistency.
  4. Preheat oven to 160 degrees or the lowest temperature possible.
  5. Cover two baking sheets with saran wrap.
  6. Divide the apricot mixture between the two trays and spread a very thin and  even layer using an offset spatula.
  7. Let dry in the oven until firm but slightly tacky for 8 hours or overnight.
  8. Remove from oven and let cool.
  9. Peel from saran wrap and slice into 1″ wide strips using a pizza wheel or scissors.
  10. Roll into cylinders.

Yields 30 rolls.
