{Tu B’Shvat} Fruit Leather Rolls

2 cups dried apricots
3 cups boiling water
2 tablespoons honey
1/2 cup sugar
Directions:
- Place apricots in a bowl and cover with boiling water. Let sit for 30-45 minutes.
- Transfer apricots (reserve the liquid) to the bowl of a food processor fitted with a blade attachment.
- Add honey and sugar and process until completely blended and smooth. Add a small amount (1 tablespoon at a time) of the reserved liquid to obtain a spreadable consistency.
- Preheat oven to 160 degrees or the lowest temperature possible.
- Cover two baking sheets with saran wrap.
- Divide the apricot mixture between the two trays and spread a very thin and even layer using an offset spatula.
- Let dry in the oven until firm but slightly tacky for 8 hours or overnight.
- Remove from oven and let cool.
- Peel from saran wrap and slice into 1″ wide strips using a pizza wheel or scissors.
- Roll into cylinders.
Yields 30 rolls.
